I am extremely passionate about my work. I chose to work at an international school because I believe that being internationally-minded extends one’s mind, knowledge and understanding beyond the immediate and the familiar so that your views and experience may be expressed to people of different cultures. International-mindedness opens minds to new ideas as part of the process of developing socially responsible citizens.
I have spent the last 30 years of my working life in the catering industry. My love of food and baking goes back to when I was a little girl. At the age of 4, I was already in the kitchen with my mum, making fruit cakes and other dishes from the West Indies. I believe that to be able to cook a good meal that others would enjoy, passion is a key ingredient.
Leaving the house at the crack of dawn to get to school for 0730, I immediately get cracking on preparing the main dishes, the salads and dessert. I take pride in the fact that everything is prepared on the day, fresh and wholesome. Other than my mother, my greatest source of inspiration, I also try to glean from feedback from the community as well as tapping into internet resources to bring new ideas and recipes to the Halcyon kitchen.
A vegetarian food lover myself, I have noticed a change in my skin, hair, energy level and how well I feels inside since adopting a healthier, vegetarian diet. I hope that I can pass on this ‘wealth of health’ to others through my cooking.
